Lenten Reflections

  1. Hi! Just hopped over here from Carrie’s blog. I see you like tilapia, too! Here’s a nice bread stuffing recipe for you:

    Bread Stuffing for Fish

    1 medium onion, minced
    1/2 Cup minced celery
    1/4 Cup butter (half a stick)
    2 Cups bread crumbs
    These spices to taste: salt, pepper, parsley, thyme and sage (or substitute poultry seasoning for the thyme and sage.)

    Saute onion in butter in a large skillet, until golden–about five minutes. Add the remaining ingredients and toss well.
    Pound the fish to flatten it .(I find that tilapia really doesn’t roll up well–although I think you could just put this right on top, too!) Put on the fish and roll it up–secure with toothpicks.
    Cook at 350 degrees for about 15 minutes, or until fish is done.
    This is good with flounder, too! Hope you enjoy it!
