Kacie’s Buttermilk Coffeecake – Recipe

Here’s a recipe to a delicious buttermilk coffeecake. It costs about $1.34 for two cakes. That’s less than a dime per serving.

  • 3 c. sifted flour $0.15
  • 1 c. sugar $0.168
  • 1 tsp. salt $0.0026
  • 1 c. packed brown sugar $0.395
  • 1 c buttermilk* $0.162 (if you use reconstituted powdered milk)
  • 1 c butter $0.25
  • 2 eggs $0.21
  • 1 tsp. baking soda (less than a penny)
  • 2 tsp. cinnamon (?)
  • TOTAL COST: $1.34 for two coffee cakes, or $0.67 each. If you make 8 slices per cake, that’s about 8 cents each.
  1. Sift flour and salt together
  2. Mix in sugars
  3. Cut in butter until crumbly. Set aside 1 cup for topping
  4. Add eggs, buttermilk, baking soda, 1 t cinnamon. Blend with mixer.
  5. Pour into 2 greased and floured 9″ pans
  6. Add 1 tsp. cinnamon to the 1 cup reserved crumbs. Sprinkle over cakes.
  7. Bake at 350 for 35 mins. or until done. Cool on cooling rack in pan.

*A substitute for buttermilk: You don’t have to go out and buy buttermilk separately. Add one tablespoon of white vinegar to a measuring cup. Add milk so that it equals 1 cup of liquid. Let this stand for five minutes before using.

These coffee cakes can be frozen. Thaw and reheat for 15 minutes at 200 degrees for a nice, warm slice.
