Carrie’s Chicken Stir Fry

From Carrie: I have high expectations for recipes that are in constant rotation at our house: quick, easy, healthy/nutritionally balanced, inexpensive, and of course delicious! Here’s a favorite that meets all of those criteria.

Ingredients:
1 c. chicken broth (I always use bouillon instead of canned broth)
1 T. cornstarch
1/4 c. soy sauce
1/2 tsp. ground ginger
dash crushed red pepper
4 c. chopped veggies (we like carrot, celery, onion and bell pepper)
1 c. chicken breast (notice the small ratio of meat to veggies)
2 T. oil, divided
2 cloves garlic

Directions:
Stir first five ingredients together in a bowl; set aside. In skillet, heat 1 T. oil over medium-high heat. Add veggies and garlic; stir-fry 3 minutes; remove. Heat remaining oil. Add chicken; stir-fry 4-5 minutes. Return veggies to skillet, and stir in broth mixture. Stir constantly and bring to a boil. Simmer and serve over rice.
